Sweet Potato Pie

Total Time 1 hour 25 minutes
Ingredients
- 1/2 stick butter
- 2 whole eggs
- 4 egg yolks (reserve whites)
- 3/4 cups sugar
- 1 small can evaporated milk
- 4 to 6 mashed cooked sweet potatoes
- 1/2 tbsp vanilla
- 1 cup shredded coconut (if desired)
Meringue
- 4 egg whites
- 1/2 cup sugar
- 1/2 tsp vanilla
Instructions

Cream butter, 3/4 cup sugar add eggs one at a time beating well.

Add remaining ingredient mixing well.

Pour into pie shell. Bake at 350° until knife comes out clean (approx. 45 minutes).
Meringue

Beat egg whites until soft peaks form.

Gradually add 1/2 cup sugar while still beating.

Add 1/2 t vanilla.

Spoon over cooked pie, sealing along edges. Bake an additional 10 minutes at 400° or until meringue is golden.
